French Style Kale Salad – Serves 4

Ingredients:

8 cups kale leaves,washed, torn into bite size pieces
Salad Dressing;
2 tablespoons rice vinegar or red wine vinegar
4 tablespoons olive oil

Toppings:

1 large tomato chopped
1/2 red onion thinly sliced or 1-2 scallions, chopped
4 ounces feta cheese crumbled (~ 3/4 cup)
16 kalamata olives pitted
4 slow poached eggs that have been briefly fried in a little oil
60g PANKO Gourmet Breadcrumbs- FRENCH STYLE

Instructions:

1. Place kale in a large salad bowl. Whisk together Salad Dressing.
2. Shallow fry FRENCH STYLE PANKO Gourmet Breadcrumbs until light brown. Set aside.
3. Divide kale among 4 bowls. Top each bowl with tomato, onion, feta cheese and olives.
4. Carefully place a fried slow-poached egg on top of each bowl.
5. Sprinkle over the fried FRENCH STYLE PANKO Gourmet Crumbs. Delish!

French Style Lamb Cutlets – Serves 4

Ingredients:

8 French Lamb cutlets, trimmed
120g PANKO Gourmet Breadcrumbs- FRENCH STYLE

Method:

1. Crumb Lamb Cutlets following simple crumbing instructions on the back of the pack.
2. Panfry Lamb Cutlets until Crumbs are golden and Lamb is cooked.

warm Potato Salad:

600g chat potatoes, quartered
2 bunches asparagus, trimmed, halved
1 tblsp lemon juice
1 tsp Dijon mustard
1/3 cup olive oil
250g punnet cherry tomatoes
1⁄2 cup torn fresh mint leaves

Method:

1. To make potato salad, cook potatoes in a large saucepan of boiling water for about 8 minutes, or until tender.
2. Add asparagus. Boil for 1 minute. Drain.
3. Meanwhile, whisk juice, mustard and 2 tblsps of the oil in a large bowl.
4. Add warm potatoes and asparagus, tomatoes and mint.
5. Season with salt and pepper. Stir to combine.
6. Serve Lamb Cutlets together with the warm potato salad and a wedge of lemon. Delish!
